Richo’s Recipe – Friday Night Pasta

Celebrity chef Adrian ‘Richo’ Richardson joins to talk about adapting to Brissy weather, his advice for men wanting to impress their partners with their cooking and Richo shares a Friday Night Pasta recipe with a surprise parmesan substitute!
Adrian’s Friday Night Pasta
Ingredients:
– 3 anchovies
– 3-4 generous tablespoons of extra virgin olive oil
– 6 cloves garlic, crushed and chopped.
– 1 red chilli, chopped or 1 pinch of dried chillies
– 8 olives, pitted, chopped
– 2 tablespoons of capers
– 2-3 tomatoes, chopped, or 1 cup tomato passata
– ½ cup white wine
– Handful basil, picked
– Handful Parsley, chopped
– 300g dried fettuccine – packet cooking instructions
– ½ cup feta crumbled
– Salt and pepper to taste
Method
- Bring pot of water to boil, add a pinch of salt
- Heat oil in pan with anchovies, garlic, chilli and the sweat for 2-3 minutes over a medium heat
- Add olives, capers and basil and then sweat fo 2-3 minutes
- Put pasta in water, and stir frequently.
- Add tomato and white wine, simmer over high heat
- Add pasta when nearly cooked to sauce
- Season with salt and pepper and parsley
- Serve with feta on top
