Richo’s Recipes – Stir Fry Noodles with a Richo twist

Spicy beef stir fry with ginger and vermicelli noodles
This dish is great with beef but feel free to substitute pork, chicken, prawns or lamb
500 gms beef, sliced thinly into stir fry strips (you can use mince)

Ingredients
200 gms dried vermicelli, soaked and drained
1 onion, sliced thinly
4 cloves garlic, chopped
1/4 cup oil
1 carrot, sliced, into thin strips
1 bunch Broccolini chopped into small pieces
½ cup cabbage, sliced thinly
½ bunch spring onion sliced
½ bunch coriander, washed and chopped
sauce
2 Tablespoons mirin
2 Tablespoons chili sauce (happy lady crispy chili is perfect)
3 Tablespoons of soy sauce
1 teaspoon coconut sugar
½ teaspoon sesame oil

Recipe
1. Sauté beef until brown in a very hot wok with half the oil, remove from wok and place
aside
2. Add oil, onion, garlic, ginger, and heat until the oil starts to bubble
3. Then add Broccolini, carrot, cabbage and sauté for three to four minutes
4. Add the pre-soaked and drained vermicelli
5. Add the sauce, coriander and spring onion, toss for one minute until well combined
6. Season with salt and pepper and serve
