Flourless Almond & Coconut Cake

Flourless Almond & Coconut Cake, Preheat oven to 180ºC. Line bottom of 23cm round cake tin with baking paper.

Mix all dry ingredients:
1 ½ cup almond meal
1 ¼ cup caster sugar
¾ cup desiccated coconut

Mix all wet ingredients:
4 eggs
1 ½ teaspoons vanilla extrac
t ¼ teaspoon almond essence
200g melted unsalted butter

Stir wet ingredients into dry, fill into tin, top with 2 tablespoons flaked almonds and bake for 45-50 minutes.
