Mad Micks - Chilli jam
Equal parts of sugar and chopped up chilli (red jalepeno or sumaro chilli – not too hot)
1 level teaspoon of citric acid per kilo of sugarAdd chilli and sugar and refrigerate. When sugar takes up juices of chilli, put it into a heavy bottom saucepan with the citric acid and bring to boil…
Once melting, add a ¼ a cup of lemon juice and a ¼ teaspoon of ginger…
Bring to the boil and slowly simmer for 15 minutes – continue to stir
Scrape off any froth that comes to the surface
Bottle and Bob’s your uncle!
