Curried chicken and mango salad

You need:
500gms Chicken tenderloins
2 tsp curry powder
1 tsp grated fresh ginger
1 clove garlic crushed
1 tbsp light olive
½ an iceberg lettuce
1 large mango
1 small Spanish onion finely sliced
1 lime sliced

For the dressing:
3 level tbsp of Plain Yoghurt
3 level tbsp light mayonnaise
2 level tbsp orange juice
1/2 tsp finally grated lime ring
1 tbsp chopped chives
A dash of sweet chilli to taste
Method:
Put chicken into a shallow dish, then combine the curry powder, ginger, garlic and oil and stir through chicken until chicken is completely covered.
Cover and refrigerate until ready to cook.
Combine dressing ingredients in a medium sized bowl.

Assemble lettuce on a plate and add a slices of mango cheek. Cook the curried chicken very gently. Sprinkle the chicken with a little salt.
Add the hot chicken to the lettuce. Spoon over the yoghurt dressing. Scatter the onion and serve.
